Chioggia also known as Candy Stripe Beet for its white and red alternating concentric rings. Roots are very sweet and the edible tops (greens) are mild and light green in color. Italian heirloom variety. Sow outdoors in early spring through August in full sun or partial sun. Will tolerate shade in well drained soil. Keep moderately moist during germination (10-20 days). Space sowing times a few weeks apart for continuous yields. Add lime to soil for better flavor and texture. Harvest greens when young. Used cooked or raw. Roots mature in about 60 days. Steam, boil, and pickle. Beet greens and roots are rich in vitamins and minerals, a good source of fiber.
